'Ello, as you all know I am the clans chef.

So I is wanting to share my favorite recipes with you all, as well as find out what you like ^^

Kai let's start:

You know how when you go into a Chinese fast food place they serve you a Greasy egg-roll full of oily goodness inside, and wonder 'How the hell do they make these?' Well Imma Tell you =3

Egg-rolls from teh scratch ^^

Dough For Egg-roll skins, and Chinese noodles.
2 cups sifted flour
1 egg
1/2 cup of cold water
Tsp salt



Sift the salt, and flour together into a large mixing bowl.

On the side break the egg into a bowl, and pour the water in, whisk together till bubbles form on the top.

Make a well (A hole) In the flour mixture, and pour the liquid in, now using your fingers push some flour from the sides into the liquid and mix together. Repeat until you have a rough dough.

Place the dough on a bread board, or counter top and knead until soft, add water by the half teaspoon if needed.

Wrap in plastic, and leave sitting for 20 minutes. Now it's ready for use ^^





Chinese noodles.

Roll out the dough onto a surface sprinkled with cornstarch. Cut into strips, and deep fry till crispy and brown.

You can also make a 2 inch ball out of the dough, roll it flat into a circle and put it into the deep fryer and push down with a ladle, this will give you a nice bowl for serving a salad or a dish in.



Egg-rolls.

Filling-
1 Part cabbage – Shredded thinly
1 Part Carrot – Cut into thin strips
1 Part onion – cut opposite the half moon side (Cit down the middle of the root, and then cut on either side of the root, towards the middle in slices)
Anything else you want, just keep it in thin strips.
Soy sauce
sesame seed oil
sesame seeds
brown sugar


Green onion - cut into strips as long as the other vegetables, but kept in tube form.
Cornstarch
Slurry (One part cornstarch one part water, around half a cup of each)

Make four inch balls out of the dough, and sprinkle lightly with cornstarch. Roll out thinly and lightly brush with cornstarch, then shake off and stack.

Sautee the cabbage, onion and carrot (And meat if you're using), once well browned, place in a bowl and add Soy sauce, Sesame seed oil, Sesame seeds, and Brown sugar to taste.

Place a skin on a flat surface, dip your fingers in the Slurry, and dab around the edges of the skin. Place some of the filling on the centre of the skin and place 2-3 Green onion pieces on top. Fold two sides into the middle, then fold over one side onto the centre, then Roll tightly.

Place seam side DOWN until ready to fry.

Heat oil to high heat, and place egg-rolls seam side down, once golden brown on both sides place onto paper towel to drain.

Enjoy.

Mongolian Beef.

Marinade:
Coconut milk
Soy sauce
Sesame seed oil
Garlic
Spicy Paprika
Pepper



Beef cut into thin strips
Green pepper Juliene
Carrot Juliene
Onion Juliene
Green onion - Tube strips
Broccoli
A slurry


Mix the marinade together, and put the beef inside. Cover and let
it marinade for at least 2 hours.

Take the meat out of the marinade, and let all the liquid drip out, place it
in a hot sautee pan with the vegetables, sautee until cooked. Pour the marinade into the pan,
and add slurry once warm. Allow to simmer for 1 minute, and take out of the pan.

Serve o.O

My fav. recipe:

Air
Water
Earth
Fire

1. Mix the water with the air in an air-tight container.
2. Pump in air into the container.
3. Heat until boiling.

Now dump it in the bin. And you've got rich compost for nothingness.

Yes, that's a classic favorite, but I find this recipe easier:

Ingredients: nothing

Step 1: Done.
